Regional plates, coastal notes and narrative cocktails form the creative Indian heart at Vayu, with its menu journeying across India’s landscapes.
Named after the Sanskrit word for wind, Vayu draws inspiration from the force that crossed India long before highways formed the links. Just as the wind sojourned through India as the first traveller, moving across coastlines, mountains, plains and deserts, Vayu arrives as a mark of the movement and memory that form the heart of India.

Designed as an open rooftop retreat, Vayu brings in intimate corners, communal tables and a sparkling bar, creating a mood perfect for relaxed evenings. Small plates arrive in Shrimp Pickle with Masala Brioche (reinterpreting a familiar coastal preserve in contemporary format), Chicken Wings Vepudu drawn from Andhra flavours, and Steamed Kalimpong Momos and Jeedipappu Pakoda bringing in influences from the hills across India. Distinct regional traditions rule the menu reflecting the diversity of Indian flavours and culinary legacies: Andhra’s Gongura Mamsaam sits alongside Kundapur Ghee Roast from coastal Karnataka, Kerala’s Meen Pollichattu, Kolhapuri Mutton Sukka from Maharashtra and Butter Chicken from Old Delhi.

The cocktail programme unfolds through The Paper Plane’s Logbook, inspired by the simple act of folding a paper plane and watching it drift into the unknown. Each symbolic landing becomes the starting point for a new discovery, picking up regional ingredients, familiar flavours and memories along the way, just like a flight lands in a grandmother’s kitchen, inspiring a cocktail with gongura, and another settles on a mango tree, mixing nostalgia with geography. Crimson Wind pairs gongura with tequila and salted agave, Kokum Cloud brings together gin, kokum and passionfruit, while Firestorm Ember layers ginger-infused tequila with fermented chilli agave.
